While at Rex Hill, Lynn spent years working with 108 chardonnay from Seven Springs waiting for the first block of Dijon 115 Pinot noir to mature. Finally in 1999, the 115 was available. We appreciate the dark dense blueberry fruit and tight structure Seven Springs contributes. With bottle age, this wine creates a multitude of layers and texture, often distinctive to the Eola Hills. Seven Springs Vineyard is owned by the Weatherspoon family.
